Easy Creamy Apple & Butternut Squash Soup

A velvety blend of butternut squash, sweet apple, and a touch of curry spice, this soup is the perfect balance of sweet, savory, and comforting.
Servings: 6

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cups chopped yellow onions (about 3)
  • 1 teaspoon mild curry powder
  • 5 pounds butternut squash (peeled and cubed) 2 large
  • 1 1/2 pounds chopped sweet apples (5-6)
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cups water
  • 2 cups apple juice

Method
 

  1. 1. Combine the butter, olive oil, onions, curry powder in a large pot for 15 minutes or until onions are softened.
  2. 2. Add squash, apples, water, salt pepper to the pot. Simmer for 30-40 minutes until squash and apples are soft.
  3. 3. Puree the mixture in a food processor, blender or use immersion blender. Return the soup to the pot and add the apple juice to achieve flavor and consistency that you like. Taste for additional salt and pepper.
